Winter warmer

I’ve been struggling big times with eating right over the past few weeks. Menu planning and batch cooking keep coming into my mind because I know they work and I just can’t seem to go materialize those concepts. But, I got lucky with this one. It’s full of chicken, a super lean protein,  it also has beans and those are a good complex carb. So far I have eaten this for 3 lunches this week and have 2 more servings in the freezer.


Chicken, Roasted Pepper and White Bean Soup

High protein-good carbs low fat.

3 bone in, skin on chicken breasts

3 pablano peppers

4 Anaheim peppers

1 large onion

3 cloves garlic, minced

4 cups chicken stock

1 can garbanzo beans

2 cans white beans, nave or cannelloni

Cilantro, avocado and jack cheese to garnish

Pre heat oven to 400.

Line a baking sheet  with tin foil and place the chicken on it. Drizzle with olive oil, salt and pepper. Bake for 40 minutes, until the chicken is cooked through. When the chicken is done remove it from the oven and allow it to cool on the baking sheet. When cooled, remove the skin and the bone, chop or shred the chicken in small to medium pieces. Save the juice that has come off the chicken and has collected in the foil.

On a different baking sheet, place both peppers. Drizzle them with salt and pepper and bake for 30 minutes. When the skin of the peppers is puffy remove them from the oven and place them into a bowl. Cover the bowl with plastic and let cook. When the peppers are cool remove the skin, steams, seed and chop them into ½ inch pieces.

In a large pot over medium heat add 2 tablespoon of oil, the onions and the garlic. Cook until the onions are very soft, 6 minutes. Season with salt and pepper.

Add the reserved chicken juice, the shredded chicken meat, chicken stock, roasted peppers and beans.

Simmer for 30 minutes, you may need to add more liquid depending on the consistency desired and how much evaporates while cooking.

Garnish with cheese, avocado and fresh cilantro.

If you like spicy things roast a few jalapenos along with the other peppers and add them.
