40 days and 40 nights….

It’s Lent, pretty much the only religious practice I follow.

LV and I are giving up sugar, processed sugar. Don’t laugh too hard, we might make it a day or two. We stashed all the candy we had at our desk in empty cubes at work…hope we don’t get ants.

A foodie friend of mine at work is giving up meat, and all animal products….what! Enzo had this to say about all that crazy business:

I made her a rice salad….

Wild Rice Salad

4-Cups cooked Wild Rice
4-6 Celery Stalks, sliced thin
8-Green Onions, sliced
2-Cups Thawed frozen peas (petite size works best; do not cook)
1+ Cup Pine Nuts, not salted (toasted, see #2 below)
¾-1 Cup Dried Cranberries
½-cup chopped parsley
Salt/Pepper to taste

Dressing:
½ Cup Olive Oil
¼ Cup Red Wine Vinegar, I used a white raspberry balsamic
Juice of half a Lemon
2 TBSP. Dijon Mustard
1 TBSP. Mixed dried herbs
Salt and Pepper to taste
2 tsp. honey,
1 clove garlic, minced

 

  1. Whisk together dressing ingredients.
  2. In a large bowl gently mix cooked cooled rice, celery, green onions, parsley, peas, dried cranberries, pine nuts and dressing.  Add salt and pepper to taste.  Chill completely before serving.
